Until Sept 23: A part of a three-part, artcentric celebratio­n titled “Wisdom Of Self”, Baan Borneo Club features a conceptual dining experience inspired by the ancient Taoist wisdom and prepared by the hotel’s executive chef. Priced at 1,490 baht per person, or 1,990 baht per person with alcohol pairing, the three-course dinner showcases dishes such as enoki mushrooms with warm sake-egg yolk sauce and uni; crispy tuile with eggs cocotte, foie gras, truffle and angel hair pasta in diable sauce; and pavlova blackberry. The restaurant also offers a “Boutique Of Jewels” afternoon tea. June and July: Siam Tea Room authentic Thai cuisine eatery presents a new promotion showcasing dishes prepared with monthong

durian. Dishes include young durian salad with fresh mangosteen and shrimp; stirfried prawns with young durian, chilli and spring onion; yellow curry with braised pork ribs, young durian and lemongrass; slowbraise­d beef cheek massaman curry with young durian; and dessert of durian sticky rice with coconut milk. Goji Kitchen + Bar features every Friday, Saturday and Sunday, and a grand buffet highlighti­ng Romanstyle Italian cuisine. Expect to find among a sweeping variety of internatio­nal dishes, Roma favourites such as gnocchi cacio e pepe; saltimbocc­a alla Romana and pizza Margherita and ricotta lemon pie. June and July: On the first and third Thursday of the month, Rib Room & Bar Steakhouse offers an eight-course Wagyu beef tasting menu Kaiseki style by French executive chef. Limited to eight guests seated at the Kitchen Bar, the dinner features dishes such as beef tartare with Korean and French flavours; teriyaki grilled finger rib with brown butter espuma, braised kohlrabi and potato glass; shabu sirloin with eryngii noodles, ponzu and sesame sauce; hibachigri­lled hanger steak brushed with red wine reduction; beef-fat fried rice with soymarinat­ed egg; beef tea with tarragon and thyme; and chocolate canneles Bordelais fondant with vanilla bean ice cream. Until September: Michelin-starred Thai restaurant Sra Bua by Kiin Kiin offers a “Summer Journey” menu with a range of dishes inspired by regional Thai recipes. Expect to find tom yum goong with homemade prawn cracker and lobster mayo accompanie­d by fried prawn dim sum and marinated prawn taco; spicy larb duck salad with foie gras foam and Japanese cucumber sorbet; yellow curry with crab meat; Hokkaido scallops with lemongrass beurre blanc and German white asparagus; a chicken rice lava cake served with chicken soup sphere; slow-cooked braised Australian Wagyu beef short ribs with fried oyster, homemade oyster sauce, onion purée and onion chips; and lychee yoghurt sorbet, lychee flambé with rhubarb, rose jelly and lime meringue. Prices are 1,850 baht for a four-course; 2,800 baht for a six-course and 3,400 baht for an eight-course set. An additional cold-pressed juice pairing costs 790-990 baht.

Dinner which features dishes such as Caesar salad, pumpkin soup, grilled tuna steak served with lemon butter sauce; beef roulade with potato; grilled pork fillet with white beans; and fettuccine with garlic and chilli sauce, is priced at 490 baht per set inclusive of a glass of wine. The restaurant also offers on Friday, a Mediterran­ean-themed buffet dinner at 490 baht per person. A group of four diners pays for three persons. Children under 12 receive a 50% discount.

June: After a year-long renovation, the resort reopens with an additional brand-new beachside restaurant Nómada. The cuisine, by a Chilean head chef, is inspired by South American indigenous cooking. Selection of small plates and tapas includes fresh sea bass and grilled river prawns with Chilean yellow chilli and pebre sauce; rock lobster in Chilean deglazed white wine sauce; ceviche with mango; wonton cones with salmon, soy and sesame oil; shrimp with house-made mayonnaise and crispy quinoa; and crab with avocado brunoise. While its highlighte­d main courses include grain-fed Angus tomahawk, beef rib-eye, tenderloin steak, slow-cooked picanha beef, roasted chicken, whole red snapper and Indian Ocean octopus. There are also various choices of desserts and cocktails, including grilled and smoked local pineapple with toffee sauce and homemade coconut ice cream; passion fruit and papaya mousse cheesecake; and a peppery and sour Piñapeño cocktail.

July to September: On the first and last Friday night of the month, Laan Na Kitchen restaurant showcases a special buffet dinner with a variety of Spanish, Mediterran­ean and internatio­nal cuisine. Highlights include slow-cooked Moroccan spiced lamb shank with couscous; roasted spice-rubbed whole chicken with dried prunes; lamb kofta with tzatziki; and slow-roasted Australian beef tenderloin with a selection of flavoured mustards, gravy and blistered green chilli. Also available are artisan cheeses and Spanish cold cuts including Ibérico ham, chorizo and chicken ham. The buffet is priced at 1,400 baht net per adult and 700 baht net per child. Two-hour free-flow package of house wine, draft beer and soft drinks costs 1,000 baht net per person.

June: Panorama restaurant reopens with a total interior makeover and a new internatio­nal menu by British head chef Andrew Brown. Dishes include smoked salmon carpaccio; Pattaya chicken salad; fettuccine with salmon alfredo sauce; ossobuco di Vitello alla Milanese; murgh tikka masala; sour and spicy fried salmon steak; pineapple lobster; and “helicopter” pad Thai.
