Priced at 1,490 baht per person, or 1,990 baht per person with alcohol pairing, the three-course dinner showcases dishes such as enoki mushrooms with warm sakeegg yolk sauce and uni; crispy tuile with eggs cocotte, foie gras, truffle and angel hair pasta in diable sauce; and pavlova blackberry. The restaurant also offers a “Boutique Of Jewels” afternoon tea. Limited to eight guests seated at the Kitchen Bar, the dinner features dishes such as beef tartare with Korean and French flavours; teriyaki grilled finger rib with brown butter espuma, braised kohlrabi and potato glass; shabu sirloin with eryngi noodles, ponzu and sesame sauce; hibachi-grilled hanger steak brushed with red wine reduction; beef-fat fried rice with soy-marinated egg; beef tea with tarragon and thyme; and chocolate canneles Bordelais fondant with vanilla bean ice cream. The featured menu includes guacamole with corn tostadas; Aguachile with fresh tiger prawns; fresh coconut ceviche served with fermented soy, coconut milk leche de tigre with yellow chilli; chicken and green mole; fish Zarandeado with fried shallots and grilled lemon; and slow-cooked short rib birria.

July: Japanese restaurant Kinu by Takagi features a special caviar promotion to complement the exquisite multi-course kaiseki lunch and dinner. Premium French black caviar from Sturia is used in dishes such as homemade sesame tofu served with Usui green bean sauce, Hokkaido sea urchin and vintage caviar; Kagoshima Kuruma prawn with vintage caviar in dashi clear soup; steamed abalone served with abalone liver sauce and classic caviar; and charcoal-grilled Tottori Wagyu beef served with classic caviar. Served amid a fantastica­l world of flower arts is a sensually delicate afternoon tea that encompasse­s sweet and savoury delicacies including orchid cakes with passion fruit, chocolate, apple rose petals and yuzu meringue; white peach and cherry blossom pop cakes; shrimp wrapped in lotus; sea bass spring rolls; and a lavender-flavoured scone with clotted cream, pineapple-jasmine jam and caramel butter. The price is 1,950 baht per set for two guests inclusive of tea, coffee or mocktail.

July: Dynasty Chinese restaurant offers a sharing platter of three signature BBQ items at 850 baht. Uno Mas restaurant introduces a unique “Tapas Tree” at 890 baht per set. Highlighte­d are Seafood Tower featuring golden king crabs, Phuket lobsters, blue swimmer crabs, tiger prawns, mussels, clams, squid, scallops and oysters; lobster roll with butter sauce on a hot toasted bun; a surf and turf burger; and Louisiana-inspired seafood bucket.

July: After a year-long renovation, the resort reopens with an additional brand-new beachside restaurant Nómada. The cuisine, by a Chilean head chef, is inspired by South American indigenous cooking. Selection of small plates and tapas includes fresh sea bass and grilled river prawns with Chilean yellow chilli and pebre sauce; rock lobster in Chilean deglazed white wine sauce; ceviche with mango; wonton cones with salmon, soy and sesame oil; shrimp with house-made mayonnaise and crispy quinoa; and crab with avocado brunoise. While its highlighte­d main courses include grain-fed Angus tomahawk, beef rib-eye, tenderloin steak, slow-cooked picanha beef, roasted chicken, whole red snapper and Indian Ocean octopus. There are also various choices of desserts and cocktails, including grilled and smoked local pineapple with toffee sauce and homemade coconut ice cream; passion fruit and papaya mousse cheesecake; and a peppery and sour Piñapeño cocktail.
