Dan sh enzymes maker Novozymes has nvested n a new lab n Turkey to develop bak ng enzymes that help prevent flatbreads trad t onally eaten across the M ddle East and Afr ca from go ng stale. “If you buy a p ta bread or tort lla, these breads go stale qu te qu ckly,” Andrew Fordyce, head of Novozymes food and beverage dvs on, told Reuters. “We can mprove the shelf l fe so that they’re softer for a longer per od of t me.”
