Taste the world with Michael Broderick in Dubai this week

WE ALL KNOW and love Trader Vic’s Polynesian cuisine, but at the JBR outlet this week Chef Michael Broderick, the group’s global Corporate Executive Chef, will be taking you on a culinary journey serving up an internatio­nally inspired menu every evening until October 12. Featuring dishes from TV’S menus across four different continents, we spoke to the chef to find out more. During this visit I want to bring some fun dishes from our other locations for people to taste. Apart from that, I look forward to trying out some of Dubai’s new hot spots. The classic TV tidbits (a selection of crispy prawns, BBQ ribs, and crab rangoon) and a Mai Tai are my go-to as they are for most of our guests. Trader Vic’s has been in Dubai for over 25 years and has grown up with the destinatio­n. With over 50 years of internatio­nal success, we were confident that Trader Vic’s would thrive in a setting that was so focused on the savvy world traveler. That said, I don’t think anyone could have predicted that we’d become so ingrained in the UAE and we look forward to our continued growth in the region.

To be honest I have a few close chef friends and chefs like Marcus Cooks and Antonio Bachour that I track on social media. I also track a lot of food grams to watch trends and see what is new on the markets. I would love to eat with Anthony Bourdain, my grandmothe­r, and Dave Chappelle. It’s very important to look at where the seafood comes from and flavours that will highlight the seafood. Never try to cover, over spice or mask the natural flavour.
