Cur­ried pota­toes

Prep time: 20 mins, plus mar­i­na­tion

In­gre­di­ents 1.5kg baby pota­toes 1 tbsp curry pow­der or chilli flakes 2 tsp cumin pow­der 2 tsp co­rian­der pow­der 4 tsp honey 125ml av­o­cado oil 75ml white vine­gar 5 gar­lic cloves, sliced 1 tsp or­ange zest hand­ful fresh pars­ley, chopped hand­ful fresh co­rian­der, chopped Method: 1. Boil pota­toes un­til just ten­der. 2. While pota­toes are cook­ing, mix to­gether re­main­ing in­gre­di­ents to make the dress­ing. 3. When pota­toes are done, drain and use a fork to prick them all over. 4. Driz­zle dress­ing over, toss to coat evenly and set aside to cool and mar­i­nate for a few hours or overnight. Serve at room tem­per­a­ture.
