Prep time: 20 mins, plus marination
Ingredients 1.5kg baby potatoes 1 tbsp curry powder or chilli flakes 2 tsp cumin powder 2 tsp coriander powder 4 tsp honey 125ml avocado oil 75ml white vinegar 5 garlic cloves, sliced 1 tsp orange zest handful fresh parsley, chopped handful fresh coriander, chopped Method: 1. Boil potatoes until just tender. 2. While potatoes are cooking, mix together remaining ingredients to make the dressing. 3. When potatoes are done, drain and use a fork to prick them all over. 4. Drizzle dressing over, toss to coat evenly and set aside to cool and marinate for a few hours or overnight. Serve at room temperature.
