Fish tagine

Ingredient­s pinch salt 1 lemon, juiced 1 tsp white pepper 100ml olive oil 400g firm white fish fillets 1 onion, sliced 1 tsp garlic, chopped 1 each red, orange and green bell peppers, sliced 1 tbsp chopped coriander 200g tahini 150ml water 1 tbsp cumin powder 1 tbsp red chilli paste

roasted cashews and mint, for garnishing Method: 1. Preheat oven to 165°C. Mix together salt, lemon juice, white pepper and half the olive oil and marinate fish in this mixture for 15 minutes. 2. Heat remaining oil in a frying pan and sauté onion, garlic, bell peppers and coriander. Mix together tahini, water, cumin powder and chilli paste and add to pan. Stir and cook over a medium heat for 15 minutes. 3. Cook fish in oven for 8 minutes, then leave to cool. To serve, spoon sauce on to plates and top with fish fillets. Garnish and serve at room temperatur­e.
