Fish tagine

In­gre­di­ents pinch salt 1 lemon, juiced 1 tsp white pep­per 100ml olive oil 400g firm white fish fil­lets 1 onion, sliced 1 tsp gar­lic, chopped 1 each red, or­ange and green bell pep­pers, sliced 1 tbsp chopped co­rian­der 200g tahini 150ml wa­ter 1 tbsp cumin pow­der 1 tbsp red chilli paste

roasted cashews and mint, for gar­nish­ing Method: 1. Pre­heat oven to 165°C. Mix to­gether salt, lemon juice, white pep­per and half the olive oil and mar­i­nate fish in this mix­ture for 15 min­utes. 2. Heat re­main­ing oil in a fry­ing pan and sauté onion, gar­lic, bell pep­pers and co­rian­der. Mix to­gether tahini, wa­ter, cumin pow­der and chilli paste and add to pan. Stir and cook over a medium heat for 15 min­utes. 3. Cook fish in oven for 8 min­utes, then leave to cool. To serve, spoon sauce on to plates and top with fish fil­lets. Gar­nish and serve at room tem­per­a­ture.
