What’s your favourite mu­sic? I like reg­gae. I wasn’t so much into it un­til I met my wife, who hails from the Caribbean. She in­tro­duced me to it and I fell in love with the genre. I don’t have a favourite artist as such, it’s more to do with the beat and rhythm. Per­fect restau­rant sound­track? It de­pends on the type of food and in­gre­di­ents used. Fast mu­sic com­ple­ments a mod­ern dish while a more clas­si­cal fine-din­ing dish would go well with slower mu­sic. Mu­si­cian you’d like to treat to your sig­na­ture dish? Amer­i­can singer-song­writer and multi-in­stru­men­tal­ist Bruce Spring­steen. He’s such a great mu­si­cian and I’ve been a fan of his through­out the decades. I love his song Streets of Philadel­phia, it brings back fond child­hood mem­o­ries.
