What’s your favourite music? I like reggae. I wasn’t so much into it until I met my wife, who hails from the Caribbean. She introduced me to it and I fell in love with the genre. I don’t have a favourite artist as such, it’s more to do with the beat and rhythm. Perfect restaurant soundtrack? It depends on the type of food and ingredient­s used. Fast music complement­s a modern dish while a more classical fine-dining dish would go well with slower music. Musician you’d like to treat to your signature dish? American singer-songwriter and multi-instrument­alist Bruce Springstee­n. He’s such a great musician and I’ve been a fan of his throughout the decades. I love his song Streets of Philadelph­ia, it brings back fond childhood memories.
