What’s your favourite music? I like reggae. I wasn’t so much into it until I met my wife, who hails from the Caribbean. She introduced me to it and I fell in love with the genre. I don’t have a favourite artist as such, it’s more to do with the beat and rhythm. Perfect restaurant soundtrack? It depends on the type of food and ingredients used. Fast music complements a modern dish while a more classical fine-dining dish would go well with slower music. Musician you’d like to treat to your signature dish? American singer-songwriter and multi-instrumentalist Bruce Springsteen. He’s such a great musician and I’ve been a fan of his throughout the decades. I love his song Streets of Philadelphia, it brings back fond childhood memories.
