Date balls
(makes 40)
Prep time: 10 mins Cooking time: 30 mins
Ingredients
1kg good-quality dark dried dates, pitted and chopped
50g butter
2 cups Rice Krispies cereal coconut flakes
Method:
1. In a large pan, cook dates and butter over medium-low heat until dates melt into a paste-like consistency. Remove from heat.
2. While date mixture is still hot, add Rice Krispies. Mix well and let cool.
3. When mixture is cool enough to handle, make lime-size balls and roll in coconut flakes.
