Sweet potato soup

Cooking time: 25 mins Ingredient­s 1/2 onion, chopped 1 leek, cleaned and chopped 1 celery stalk, chopped 1 parsnip, peeled and chopped 3 sweet potatoes, peeled and chopped 1.5 litres milk 1 vegetable bouillon cube salt and pepper sweet potato chips, to serve Method: 1. Sauté onion, leek and celery until onion is translucen­t. 2. Add parsnip, sweet potatoes, milk and vegetable bouillon and cook until sweet potato is soft. Purée soup and season. Add a little hot water if soup is too thick. Serve with sweet potato chips.
