In­gre­di­ents 450g beef mince 3 tbsp oil 100g beef ham 1 large onion, finely chopped 3 gar­lic cloves, crushed 1 green bell pep­per, finely diced 1 tbsp ground cumin 1 tbsp tomato sauce 1 tbsp white vine­gar 1 large potato, cut into chunks and boiled 4 tbsp olives, stoned and coarsely chopped 1 cup cooked white rice 4 eggs, fried sunny side up Method: 1. Fry mince in half the oil un­til cooked. Add beef ham, onion, gar­lic and green bell pep­per and cook un­til onion is translu­cent. 2. Add cumin, tomato sauce and vine­gar. Mix well over medium heat un­til bub­bling. 3. In an­other pan, sauté potato chunks in re­main­ing oil un­til brown. Stir in olives. 4. To serve, layer in or­der rice, mince, potato and eggs.
