Golden spiced roasted leg of lamb

(Serves 4-6)

Prep time: overnight Cooking time: 3 hours 6 garlic cloves, crushed 2 lemons, juice and zest of 1 tsp sweet paprika 1 tsp cumin 1 tsp coriander 1/2 tsp cinnamon 2 tbsp olive oil 1 tsp salt 1/2 tsp pepper 1 x 2kg leg of lamb Lamb stock or water, as required

1Mix

together garlic cloves, lemon juice and zest, paprika, cumin, coriander, cinnamon, olive oil, salt and black pepper. 2Put

lamb on a work surface and make slashes about 1 1/4cm (1/2 inch) deep all over it. 3Put

lamb on a rimmed baking sheet and spread spice paste all over, rubbing into meat well. Cover and refrigerat­e overnight. 4Preheat

oven to 180°C. Roast lamb for two hours and 30 minutes, adding some stock or water to tray and basting it from time to time. Roast until lamb is cooked.

5Rest

lamb in a warm place for about 30 minutes. Slice thinly and serve with roasted vegetables.
