Golden spiced roasted leg of lamb

Prep time: overnight Cook­ing time: 3 hours 6 gar­lic cloves, crushed 2 lemons, juice and zest of 1 tsp sweet pa­prika 1 tsp cumin 1 tsp co­rian­der 1/2 tsp cin­na­mon 2 tbsp olive oil 1 tsp salt 1/2 tsp pep­per 1 x 2kg leg of lamb Lamb stock or wa­ter, as re­quired

1Mix

to­gether gar­lic cloves, lemon juice and zest, pa­prika, cumin, co­rian­der, cin­na­mon, olive oil, salt and black pep­per. 2Put

lamb on a work sur­face and make slashes about 1 1/4cm (1/2 inch) deep all over it. 3Put

lamb on a rimmed bak­ing sheet and spread spice paste all over, rub­bing into meat well. Cover and re­frig­er­ate overnight. 4Pre­heat

oven to 180°C. Roast lamb for two hours and 30 min­utes, adding some stock or wa­ter to tray and bast­ing it from time to time. Roast un­til lamb is cooked.

5Rest

lamb in a warm place for about 30 min­utes. Slice thinly and serve with roasted veg­eta­bles.
