Tomato & chilli jam
(makes 3-4 cups)
Cooking time: 40 mins
1 kg cherry tomatoes, washed
2 tbsp water
1 red chilli, finely chopped
1 kg sugar ( jam sugar is best)
1. Place tomatoes with water in a covered 4-litre microwave-proof dish and microwave on high for 5-10 minutes.
2. Add sugar and chilli and microwave on medium heat for another 30 minutes. Stir after first 10 minutes and then just before cooked through.
3. Allow jam to cool then spoon into sterilised jars and refrigerate.
