Tomato & chilli jam

1 kg cherry toma­toes, washed

2 tbsp wa­ter

1 red chilli, finely chopped

1 kg sugar ( jam sugar is best)


1. Place toma­toes with wa­ter in a cov­ered 4-litre mi­crowave-proof dish and mi­crowave on high for 5-10 min­utes.

2. Add sugar and chilli and mi­crowave on medium heat for an­other 30 min­utes. Stir af­ter first 10 min­utes and then just be­fore cooked through.

3. Al­low jam to cool then spoon into ster­ilised jars and re­frig­er­ate.
