Ingredients 1 tsp butter, softened 4 slices brioche bread, crusts removed 4 slices Cheddar cheese Method 1. Butter bread slices on one side. To make one sandwich, place two cheese slices in between two slices of bread, ensuring that buttered sides are on outside. Repeat to make another sandwich. 2. Place sandwiches on low heat in a skillet or on a griddle. Cook until golden brown, turning half way through. Leave to cool before packing in lunch box. Note: Instead of giving your child potato crisps, which are high in calories, prepare pumpkin crisps, which are equally tasty but healthier. To make, preheat oven to 180°C. Thinly slice pumpkin, toss with olive oil and season with salt. Bake for 20 mins until brown and crispy, turning half way through.
