In­gre­di­ents 1 tsp but­ter, soft­ened 4 slices brioche bread, crusts re­moved 4 slices Ched­dar cheese Method 1. But­ter bread slices on one side. To make one sand­wich, place two cheese slices in be­tween two slices of bread, en­sur­ing that but­tered sides are on out­side. Re­peat to make an­other sand­wich. 2. Place sand­wiches on low heat in a skil­let or on a grid­dle. Cook un­til golden brown, turn­ing half way through. Leave to cool be­fore pack­ing in lunch box. Note: In­stead of giv­ing your child potato crisps, which are high in calo­ries, pre­pare pump­kin crisps, which are equally tasty but health­ier. To make, pre­heat oven to 180°C. Thinly slice pump­kin, toss with olive oil and sea­son with salt. Bake for 20 mins un­til brown and crispy, turn­ing half way through.
