(serves 2) In­gre­di­ents 100g mixed let­tuce leaves, such as frisee, rocket and lamb’s let­tuce, washed eggs, hard boiled, peeled and quar­tered green beans, trimmed and blanched new pota­toes, boiled, peeled, cut into chunks black olives, pit­ted and chopped tinned tuna chunks, drained 2 250g 250g 16 400g For dress­ing 5 tbsp 2 tbsp 1/4 tsp 1 tbsp Method 1. Place let­tuce on a large, flat serv­ing plat­ter. Ar­range eggs, beans, pota­toes, olives and tuna on top. Place all dress­ing in­gre­di­ents in a bowl and whisk un­til well com­bined. Pour dress­ing over salad, toss gen­tly and serve with crusty bread rolls.
