(serves 2) Ingredient­s 100g mixed lettuce leaves, such as frisee, rocket and lamb’s lettuce, washed eggs, hard boiled, peeled and quartered green beans, trimmed and blanched new potatoes, boiled, peeled, cut into chunks black olives, pitted and chopped tinned tuna chunks, drained 2 250g 250g 16 400g For dressing 5 tbsp 2 tbsp 1/4 tsp 1 tbsp Method 1. Place lettuce on a large, flat serving platter. Arrange eggs, beans, potatoes, olives and tuna on top. Place all dressing ingredient­s in a bowl and whisk until well combined. Pour dressing over salad, toss gently and serve with crusty bread rolls.
