I wanted to give the afternoon tea at Jumeirah Zabeel Saray a Middle Eastern twist by using ingredient­s and flavours that gave it a local identity. I worked closely with the Hotel’s culinary team to create the orange blossom financier – small cakes with rose nectar cream and orange blossom candy.
