I wanted to give the af­ter­noon tea at Jumeirah Zabeel Saray a Mid­dle East­ern twist by us­ing in­gre­di­ents and flavours that gave it a lo­cal iden­tity. I worked closely with the Ho­tel’s culi­nary team to cre­ate the or­ange blos­som fi­nancier – small cakes with rose nec­tar cream and or­ange blos­som candy.
