Belgian waffle pancakes

Serves 4 Prep time: 35 mins Cooking time: 5 mins 420g plain flour Generous pinch of salt 300g butter 1 packet fast-acting yeast 1 tbsp sugar 2 eggs, beaten 200ml cold water 270g granulated sugar Whipped cream, berries and chocolate sauce, to serve

1Sift the flour and salt into a bowl and make a well in the centre.

2Melt the butter over hot water then allow to cool until lukewarm.

3Add the butter, yeast and sugar to the eggs and mix well. Add the water and mix again. Pour this liquid mixture into the well in the centre of the flour and mix well to form a thick batter.

4Beat the batter for at least 10 minutes. It will probably be sticky and difficult to work with.

5After this beating, allow the batter to stand and rest in a warm place for 15-30 minutes.

6Heat a waffle iron. Drop tablespoon­fuls of the batter on to each quarter or section of the waffle iron. Let it cook until well browned. Serve with whipped cream, berries and chocolate sauce.
