Bel­gian waf­fle pan­cakes

Serves 4 Prep time: 35 mins Cook­ing time: 5 mins 420g plain flour Gen­er­ous pinch of salt 300g but­ter 1 packet fast-act­ing yeast 1 tbsp su­gar 2 eggs, beaten 200ml cold wa­ter 270g gran­u­lated su­gar Whipped cream, berries and choco­late sauce, to serve

1Sift the flour and salt into a bowl and make a well in the cen­tre.

2Melt the but­ter over hot wa­ter then al­low to cool un­til luke­warm.

3Add the but­ter, yeast and su­gar to the eggs and mix well. Add the wa­ter and mix again. Pour this liq­uid mix­ture into the well in the cen­tre of the flour and mix well to form a thick bat­ter.

4Beat the bat­ter for at least 10 min­utes. It will prob­a­bly be sticky and dif­fi­cult to work with.

5After this beat­ing, al­low the bat­ter to stand and rest in a warm place for 15-30 min­utes.

6Heat a waf­fle iron. Drop ta­ble­spoon­fuls of the bat­ter on to each quar­ter or sec­tion of the waf­fle iron. Let it cook un­til well browned. Serve with whipped cream, berries and choco­late sauce.
