Amer­i­can pancake stack with mixed berries and choco­late

Serves 4 Prep time: 10 mins Cook­ing time: 15 mins 250g plain flour 2 tsp bak­ing pow­der 1 tsp bak­ing soda 3 tbsp su­gar 2 eggs, lightly beaten 700ml but­ter­milk 4 tbsp but­ter, melted, plus ex­tra for fry­ing Mixed berries, warm choco­late sauce and straw­berry coulis, to serve

1In a medium bowl, mix to­gether the flour, bak­ing pow­der, bak­ing soda and su­gar. Add the eggs, but­ter­milk and but­ter, mix­ing to com­bine. The bat­ter should have small to medium-size lumps.

2Heat a fry­ing pan over a medium-high heat. Brush the pan with but­ter and la­dle in some of the bat­ter. Let it cook un­til the pan­cakes have bub­bles on top and are slightly dry around the edges, then flip over. Cook un­til golden on the bot­tom.

3Re­peat with the re­main­ing bat­ter, and serve the pan­cakes in a stack with the berries, choco­late sauce and coulis.
