American pancake stack with mixed berries and chocolate
Serves 4 Prep time: 10 mins Cooking time: 15 mins 250g plain flour 2 tsp baking powder 1 tsp baking soda 3 tbsp sugar 2 eggs, lightly beaten 700ml buttermilk 4 tbsp butter, melted, plus extra for frying Mixed berries, warm chocolate sauce and strawberry coulis, to serve
1In a medium bowl, mix together the flour, baking powder, baking soda and sugar. Add the eggs, buttermilk and butter, mixing to combine. The batter should have small to medium-size lumps.
2Heat a frying pan over a medium-high heat. Brush the pan with butter and ladle in some of the batter. Let it cook until the pancakes have bubbles on top and are slightly dry around the edges, then flip over. Cook until golden on the bottom.
3Repeat with the remaining batter, and serve the pancakes in a stack with the berries, chocolate sauce and coulis.
