3 tbsp olive oil 2 gar­lic cloves, chopped 200g cherry toma­toes 100g black olives, stones re­moved 500g spaghetti, cooked 125g basil pesto 150g soft moz­zarella, bro­ken into pieces 3 tbsp but­ter 4 slices of bread, bro­ken into rough pieces


1 Heat the olive oil in a pan un­til warm. Add the gar­lic and fry lightly un­til it starts to brown.

2 Add the toma­toes and lower the heat. Fry for 5 min­utes or un­til the toma­toes start to burst.

3 Add the olives, spaghetti, pesto and moz­zarella to the pan. Mix well.

4 Heat the but­ter in an­other pan un­til warm then add the bread. Fry un­til golden brown and crispy, about 3 min­utes.

5 Add the bread to the pasta. Sea­son well and serve warm.
