WARM CAPRESE SPAGHETTI

3 tbsp olive oil 2 garlic cloves, chopped 200g cherry tomatoes 100g black olives, stones removed 500g spaghetti, cooked 125g basil pesto 150g soft mozzarella, broken into pieces 3 tbsp butter 4 slices of bread, broken into rough pieces

METHOD

1 Heat the olive oil in a pan until warm. Add the garlic and fry lightly until it starts to brown.

2 Add the tomatoes and lower the heat. Fry for 5 minutes or until the tomatoes start to burst.

3 Add the olives, spaghetti, pesto and mozzarella to the pan. Mix well.

4 Heat the butter in another pan until warm then add the bread. Fry until golden brown and crispy, about 3 minutes.

5 Add the bread to the pasta. Season well and serve warm.
