SWEET­CORN SALAD

Prep time 5-10 mins Cook­ing time 10 mins Serves 8 250g beef ba­con 3 tbsp olive oil 1 large onion, finely chopped 4 large gar­lic cloves, crushed 1 tbsp grated gin­ger 1 red pep­per, chopped 1 green pep­per, chopped 3 cel­ery sticks, sliced 500g frozen sweet­corn 3-4 tbsp soy sauce METHOD

1 Trim and dis­card the fat on the beef ba­con, then cut into strips. Heat half the oil and fry the ba­con un­til crisp. Re­move and set aside.

2 Pour the rest of the oil into the same pan and heat, then stir-fry the onion, gar­lic, gin­ger, pep­pers and cel­ery for 2-3 min­utes. Add the ba­con, stir and cook to heat through.

3 Stir in the sweet­corn and cook for an­other 2 min­utes, or un­til warm.

4 Add the soy sauce and sea­son with freshly ground black pep­per. Taste and add more gin­ger or gar­lic, if de­sired. Serve warm or cold.
