Prep time 5-10 mins Cooking time 10 mins Serves 8 250g beef bacon 3 tbsp olive oil 1 large onion, finely chopped 4 large garlic cloves, crushed 1 tbsp grated ginger 1 red pepper, chopped 1 green pepper, chopped 3 celery sticks, sliced 500g frozen sweetcorn 3-4 tbsp soy sauce METHOD
1 Trim and discard the fat on the beef bacon, then cut into strips. Heat half the oil and fry the bacon until crisp. Remove and set aside.
2 Pour the rest of the oil into the same pan and heat, then stir-fry the onion, garlic, ginger, peppers and celery for 2-3 minutes. Add the bacon, stir and cook to heat through.
3 Stir in the sweetcorn and cook for another 2 minutes, or until warm.
4 Add the soy sauce and season with freshly ground black pepper. Taste and add more ginger or garlic, if desired. Serve warm or cold.
