PRAWNAND AV­O­CADO SALAD

Prep time 5-10 mins Cook­ing time 5 mins Serves 6 2 tbsp oil 2 gar­lic cloves, crushed 200g frozen prawns Juice of 1 lemon 400g let­tuce leaves 1 cu­cum­ber, quar­tered and sliced 2 av­o­ca­dos, peeled and diced Toasted gar­lic bread, to serve TO MAKE DRESS­ING, WHISK TO­GETHER 4 tbsp may­on­naise 4 tbsp yo­gurt 3 tbsp tomato sauce METHOD

1 In a pan, heat the oil and fry the gar­lic for 1 minute. Add the prawns and sauté over high heat for no more than 2 min­utes.

2 Re­move from the heat and driz­zle with lemon juice.

3 Layer the let­tuce, cu­cum­ber and av­o­ca­dos in a large dish and top with the prawns. Driz­zle with the dress­ing and serve with gar­lic bread.
