PRAWNAND AVOCADO SALAD
Prep time 5-10 mins Cooking time 5 mins Serves 6 2 tbsp oil 2 garlic cloves, crushed 200g frozen prawns Juice of 1 lemon 400g lettuce leaves 1 cucumber, quartered and sliced 2 avocados, peeled and diced Toasted garlic bread, to serve TO MAKE DRESSING, WHISK TOGETHER 4 tbsp mayonnaise 4 tbsp yogurt 3 tbsp tomato sauce METHOD
1 In a pan, heat the oil and fry the garlic for 1 minute. Add the prawns and sauté over high heat for no more than 2 minutes.
2 Remove from the heat and drizzle with lemon juice.
3 Layer the lettuce, cucumber and avocados in a large dish and top with the prawns. Drizzle with the dressing and serve with garlic bread.
