1 To make the stewed dried fruit, place the star anise and cloves in a muslin cloth and se­cure with string. Place all the in­gre­di­ents in a pan and sim­mer over medium-low heat un­til the fruit is soft. This will take 20-30 mins. 2 To make the vanilla-bean cream, place the cream and sugar in a bowl. Scrape the seeds out of the vanilla pod and add them to the bowl. Whip the in­gre­di­ents to­gether un­til thick. 3 To serve, scoop a spoon­ful of the fruit into a bowl and driz­zle with a lit­tle syrup from the pan. Gar­nish with a quar­ter of a vanilla bean and serve with the cream.
