STEWED DRIED FRUIT WITH SWEETENED CREAM
1 To make the stewed dried fruit, place the star anise and cloves in a muslin cloth and secure with string. Place all the ingredients in a pan and simmer over medium-low heat until the fruit is soft. This will take 20-30 mins. 2 To make the vanilla-bean cream, place the cream and sugar in a bowl. Scrape the seeds out of the vanilla pod and add them to the bowl. Whip the ingredients together until thick. 3 To serve, scoop a spoonful of the fruit into a bowl and drizzle with a little syrup from the pan. Garnish with a quarter of a vanilla bean and serve with the cream.
