BA­NANA OAT LOAF

Prep time 15 mins Cook­ing time 1 hour Makes 1 loaf 2 cups oats 2 tsp bi­car­bon­ate of soda 1 tsp salt 1 tsp cin­na­mon pow­der 2 eggs, whisked 1 tsp vanilla essence 2 ba­nanas, mashed 125ml ap­ple sauce 125ml yogurt 4 tbsp melted but­ter ¾ cup (180ml) brown su­gar 2 tbsp honey 1 cup roughly chopped pecans ½ ba­nana (it should be sliced length­wise) Pre­heat the oven to 180°C. In a blender, blitz to­gether oats, soda bi­carb, salt and cin­na­mon pow­der. In a sep­a­rate bowl, mix to­gether the re­main­ing in­gre­di­ents, ex­cept pecans and ba­nana, un­til well com­bined. Add to the oat mix­ture and mix well. Add pecans and spoon into a greased loaf tin. Top with ba­nana slice and bake for an hour or un­til done. Serve with but­ter.
