CHICK­PEA FLAT­BREAD

Prep time 3 hours Cook­ing time 30 mins Makes 1 2½ cups (625ml) chick­pea flour 875ml wa­ter 1 tsp bak­ing pow­der 4 tbsp oil Pre­heat the oven to 180°C. In a mix­ing bowl, com­bine flour and wa­ter un­til smooth. Sea­son with salt and pep­per and let it stand for 3 hours. Add bak­ing pow­der. Pour oil into a bak­ing tray with high sides. Tilt the tray around for the oil to cover the en­tire sur­face. Pour the bat­ter into pan and bake for 30 min­utes or un­til cooked through and firm. Sear rapidly on a heated grid­dle pan be­fore serv­ing.
