CHICKPEA FLATBREAD

Prep time 3 hours Cooking time 30 mins Makes 1 2½ cups (625ml) chickpea flour 875ml water 1 tsp baking powder 4 tbsp oil Preheat the oven to 180°C. In a mixing bowl, combine flour and water until smooth. Season with salt and pepper and let it stand for 3 hours. Add baking powder. Pour oil into a baking tray with high sides. Tilt the tray around for the oil to cover the entire surface. Pour the batter into pan and bake for 30 minutes or until cooked through and firm. Sear rapidly on a heated griddle pan before serving.
