12 strips beef bacon 1 large packet of mixed salad leaves, washed and patted dry 500g broccoli, cut into florets, blanched 1 red apple, cored, cut into thin slices and drizzled with lemon juice to prevent discoloration ½ lemon, juiced Toasted hazelnuts, as desired 200g feta cheese, cubed ½ white onion, sliced into rings FOR THE DRESSING, WHISK: 4 tbsp white grape vinegar 1 garlic clove, crushed 1½ tsp salt Black pepper, to taste 180ml sunflower oil
Fry the beef bacon until crisp and drain on kitchen towels. Toss the salad ingredients together and arrange on a platter. Drizzle the prepared dressing over and serve immediately.
