BROC­COLI SALAD

12 strips beef ba­con 1 large packet of mixed salad leaves, washed and pat­ted dry 500g broc­coli, cut into flo­rets, blanched 1 red ap­ple, cored, cut into thin slices and driz­zled with le­mon juice to pre­vent dis­col­oration ½ le­mon, juiced Toasted hazel­nuts, as de­sired 200g feta cheese, cubed ½ white onion, sliced into rings FOR THE DRESS­ING, WHISK: 4 tbsp white grape vine­gar 1 gar­lic clove, crushed 1½ tsp salt Black pep­per, to taste 180ml sun­flower oil

Fry the beef ba­con un­til crisp and drain on kitchen tow­els. Toss the salad in­gre­di­ents to­gether and ar­range on a plat­ter. Driz­zle the pre­pared dress­ing over and serve im­me­di­ately.
