GRILLED PRAWNS WITH CHILLIES AND CORIANDER

Prep time 30 mins Cooking time 10-15 mins Serves 4 600g large prawns, cleaned and butterflie­d 175ml olive oil 2 fresh red chillies, chopped (de-seed to reduce heat) Fresh coriander, a handful, chopped 3 garlic cloves, crushed Place the prawns in a large mixing bowl. Mix olive oil, chillies, coriander, garlic, and some salt and pepper and pour over the prawns. Mix through, cover with a cling film and refrigerat­e for 20 minutes. Barbecue over medium heat, butterflie­d side up, until they change colour and curl up. Brush continuous­ly with the marinade. Remove the prawns from the heat as soon as they are done to prevent them from overcookin­g.
