GRILLED PRAWNS WITH CHILL­IES AND CO­RIAN­DER

Prep time 30 mins Cook­ing time 10-15 mins Serves 4 600g large prawns, cleaned and but­ter­flied 175ml olive oil 2 fresh red chill­ies, chopped (de-seed to re­duce heat) Fresh co­rian­der, a hand­ful, chopped 3 gar­lic cloves, crushed Place the prawns in a large mix­ing bowl. Mix olive oil, chill­ies, co­rian­der, gar­lic, and some salt and pep­per and pour over the prawns. Mix through, cover with a cling film and re­frig­er­ate for 20 min­utes. Bar­be­cue over medium heat, but­ter­flied side up, un­til they change colour and curl up. Brush con­tin­u­ously with the mari­nade. Re­move the prawns from the heat as soon as they are done to pre­vent them from over­cook­ing.
