GRILLED PRAWNS WITH CHILLIES AND CORIANDER
Prep time 30 mins Cooking time 10-15 mins Serves 4 600g large prawns, cleaned and butterflied 175ml olive oil 2 fresh red chillies, chopped (de-seed to reduce heat) Fresh coriander, a handful, chopped 3 garlic cloves, crushed Place the prawns in a large mixing bowl. Mix olive oil, chillies, coriander, garlic, and some salt and pepper and pour over the prawns. Mix through, cover with a cling film and refrigerate for 20 minutes. Barbecue over medium heat, butterflied side up, until they change colour and curl up. Brush continuously with the marinade. Remove the prawns from the heat as soon as they are done to prevent them from overcooking.
