SALMON TARTARE
Prep time 15 mins Serves 4 250g fresh Norwegian salmon fillets 6-8 shallots, finely chopped 1 tbsp capers, finely chopped 2 tbsp finely chopped gherkins 1 tbsp lemon juice 2 tbsp finely chopped Italian parsley 2 tbsp thick mayonnaise Crème fraiche, caviar, to garnish Chop the salmon finely and mix it with the remaining ingredients. Season to taste with salt and freshly ground pepper. Press the mixture into a bowl or ramekins and turn them out on to a serving plate. Garnish with crème fraiche and caviar and serve.
