SALMON TARTARE

Prep time 15 mins Serves 4 250g fresh Norwegian salmon fillets 6-8 shallots, finely chopped 1 tbsp capers, finely chopped 2 tbsp finely chopped gherkins 1 tbsp lemon juice 2 tbsp finely chopped Italian parsley 2 tbsp thick mayonnaise Crème fraiche, caviar, to garnish Chop the salmon finely and mix it with the remaining ingredient­s. Season to taste with salt and freshly ground pepper. Press the mixture into a bowl or ramekins and turn them out on to a serving plate. Garnish with crème fraiche and caviar and serve.
