Prep time 15 mins Serves 4 250g fresh Nor­we­gian salmon fil­lets 6-8 shal­lots, finely chopped 1 tbsp ca­pers, finely chopped 2 tbsp finely chopped gherkins 1 tbsp lemon juice 2 tbsp finely chopped Ital­ian pars­ley 2 tbsp thick may­on­naise Crème fraiche, caviar, to gar­nish Chop the salmon finely and mix it with the re­main­ing in­gre­di­ents. Sea­son to taste with salt and freshly ground pep­per. Press the mix­ture into a bowl or ramekins and turn them out on to a serv­ing plate. Gar­nish with crème fraiche and caviar and serve.
