Prep time 20 mins Cook­ing time 15 mins Serves 4 500g beef cubes 100ml teriyaki sauce or your favourite sauce 250ml chicken stock, hot 1 cup cous­cous Lemon zest and juice, to taste Splash of olive oil 100g roasted al­monds, chopped 1/2 red onion, finely chopped 1 large tomato, cut into wedges Baby salad leaves Pre­heat the oven to 180ºC. Mar­i­nate beef in the sauce for at least 10 min­utes. Mean­while, add the hot stock to the cous­cous in a bowl. Cover with a tight lid and keep aside for about 2-3 min­utes, us­ing a fork to loosen the grains. Add the lemon zest and juice, olive oil, al­monds, onion and tomato and stir through. Skewer the beef cubes and grill. Serve the ke­babs with the cous­cous and salad leaves.
