BEEF KEBABS WITH COUSCOUS

Prep time 20 mins Cooking time 15 mins Serves 4 500g beef cubes 100ml teriyaki sauce or your favourite sauce 250ml chicken stock, hot 1 cup couscous Lemon zest and juice, to taste Splash of olive oil 100g roasted almonds, chopped 1/2 red onion, finely chopped 1 large tomato, cut into wedges Baby salad leaves Preheat the oven to 180ºC. Marinate beef in the sauce for at least 10 minutes. Meanwhile, add the hot stock to the couscous in a bowl. Cover with a tight lid and keep aside for about 2-3 minutes, using a fork to loosen the grains. Add the lemon zest and juice, olive oil, almonds, onion and tomato and stir through. Skewer the beef cubes and grill. Serve the kebabs with the couscous and salad leaves.
