1 medium fresh pineap­ple 320g firm sweet per­sim­mons 250g ripe gold kiwi fruit 250g ripe green kiwi fruit Pomegranate ar­ils, as re­quired MAN­DARIN SU­GAR

1 medium (200g) man­darin 4 tbsp white su­gar Cut the pineap­ple into 6 2cmthick slices. Peel and slice the per­sim­mons and kiwi fruit; halve the slices. To pre­pare man­darin su­gar, finely grate the rind from the man­darin. (You will need 1 tea­spoon.) Blend or process the rind and su­gar un­til com­bined. Place pineap­ple on plates; top with the re­main­ing fruit. Scat­ter with man­darin su­gar and serve right away.
