FRUIT SALAD WITH MANDARIN SUGAR

1 medium fresh pineapple 320g firm sweet persimmons 250g ripe gold kiwi fruit 250g ripe green kiwi fruit Pomegranate arils, as required MANDARIN SUGAR
1 medium (200g) mandarin 4 tbsp white sugar Cut the pineapple into 6 2cmthick slices. Peel and slice the persimmons and kiwi fruit; halve the slices. To prepare mandarin sugar, finely grate the rind from the mandarin. (You will need 1 teaspoon.) Blend or process the rind and sugar until combined. Place pineapple on plates; top with the remaining fruit. Scatter with mandarin sugar and serve right away.
