STIR-FRIED LETTUCE WITH GARLIC AND OYSTER SAUCE

Prep time 15 mins Cooking time 10 mins Serves 4 2 tbsp peanut oil

4 garlic cloves, thinly sliced

1 romaine or other crisp lettuce, coarsely chopped

1 tbsp oyster sauce

1 tbsp light soy sauce

To taste: Freshly ground white pepper

Heat oil in a wok over high heat until smoking, then add garlic and stir-fry until fragrant, 20-30 seconds. Add lettuce, toss, then cover for 1 minute. Remove lid, toss lettuce again to combine and cover again until wilted, 2 minutes. Add sauces, season with white pepper, toss to combine and serve.
