STIR-FRIED LET­TUCE WITH GAR­LIC AND OYS­TER SAUCE

Prep time 15 mins Cook­ing time 10 mins Serves 4 2 tbsp peanut oil

4 gar­lic cloves, thinly sliced

1 ro­maine or other crisp let­tuce, coarsely chopped

1 tbsp oys­ter sauce

1 tbsp light soy sauce

To taste: Freshly ground white pep­per

Heat oil in a wok over high heat un­til smok­ing, then add gar­lic and stir-fry un­til fra­grant, 20-30 sec­onds. Add let­tuce, toss, then cover for 1 minute. Re­move lid, toss let­tuce again to com­bine and cover again un­til wilted, 2 min­utes. Add sauces, sea­son with white pep­per, toss to com­bine and serve.
