The original cake boy who’s even whipped up delicacies for the French navy is a master patissier who is showing off skills at the Jiff Big Baking Tent, where visitors will be able to take part in many baking challenges. How would you describe the UAE food scene? The UAE is one of those regions in the world where hospitalit­y and food are key to everyday lifestyle. From people’s own homes to the luxury hotels or even little back street cafes, you can be sure you will always be well fed and looked after. I am very pleased than we see more and more local traditiona­l restaurant­s and concepts opening in the UAE. Which is your favourite UAE restaurant?

I love Bleu Blanc and the Maine Oyster Bar in Dubai. For Italian, I will always visit The Villa Toscana in Abu Dhabi, but in the same time I like to immerse myself and you will find me having a proper traditiona­l Emirati feast in one of the local cafes or a hole in the wall in some back streets. A dish that imbibes the UAE food scene?

For me, my ultimate UAE food experience is to escape with my Emirati friends to the desert and cook the food on an open fire and share it sitting down on a carpet and enjoying it using my hands with hot tea or long brew fragrant coffee under a clear starry sky.
