THE PROCESS

Tanoor is a two-metre deep stone well in the ground.

Each family in the village would bring their own meat

Often around 20 to 30 goats are cooked at a time

Each goat will be applied with personal spices and wrapped in leaves

The wrapped meat is place in individual baskets made of palm leaves

Each family will place unique mark for identification.
