What’s the difference? Ice Cream

should have at least 20% milk solids and 10% milk fat by weight. Both milk and cream are used, and sweeteners account for 15% or so.

Gelato

is made using mostly or entirely milk. Having little or no cream reduces the fat content while intensifyi­ng flavours. Gelato’s creaminess comes from its density.

Frozen custard

is distinguis­hed by the egg yolk. The lecithin in the yolk is a natural emulsifier giving the dessert its rich texture

Frozen yogurt

blends yogurt with ice cream base of milk cream and sweetener. Frozen yogurt encourages growth of friendly bacteria in the intestinal tract
