STUART CAMERON

Executive chef at Morah

The one thing I can’t live without is bread. It’s so important in different cuisines and watching your own bread rise in the oven is just as good as eating it.

If I could recommend one dish at Morah it would be the lamb ribs. They have all the components that make you crave more: crispy, salty, sweet and crunchy.

When I cook for myself after a long day in the kitchen, I go back to my Italian roots. I like a comforting dish, such as simple pasta and salad with Parmesan and great olive oil.

If I could travel to any city in the world for a weekend of eating, it would be Tokyo. It’s at the top of my bucket list.

For my last meal on Earth, I’d choose miso black cod from Nobu. That never gets old.

My guilty pleasure is freshly baked cinnamon buns. I’m completely addicted.

Restaurants should be fun and loud. Places where you can really be yourself – not like having dinner at Grandma’s house!

My favourite restaurants in the world are in Barcelona. I never miss the opportunity to eat at Tapas 24 and Tickets.

If I weren’t a chef, I’d be a DJ. Or maybe a roadie for a rock band. I love music.
