For the hollandaise, put the egg yolks into a bowl over a pan of hot water and whisk with butter, salt and pepper 04. to cut the bread perfectly, use a glass and press down on the sliced bread. then toast 05. Sautée spinach with salt, pepper and butter, and place it on top of the toast along with the smoked salmon and poached egg. Finally, pour the hollandaise sauce on top
