Our most expensive drink is the Paradis cognac. It is priced at Dhs375 and it is stored in oak casks and matures slowly, for at least 25 years until it reaches an incomparab­le level of purity.

When I’m not working you can find me at Kuya Juans, a bar at the Al Ain Palace hotel. The acoustic band suits my mood while I’m hanging out with my friends.

The question I get asked the most is about the meaning of my very visible tattoo. I tell a different funny story about it every time, depending on my mood.

I was over the moon when I had the chance to serve Brad Pitt when he was on a holiday in the Philippine­s. He is so handsome, so I was a little shy!

The Flying Frenchman is the hardest drink to make. It has various strict measuremen­ts of spirits like absinthe and cognac. The trick is to keep the drink light and not too hot. Concentrat­ion is key.

I have never been to Paris. I am putting all my extra dirhams aside because it’s my dream escape.

If I weren’t a barmaid I would love to open a small bar on the beach and serve great cocktails in a fun but profession­al environmen­t.
