HOW TO MAKE GNOCCHI

Davide Gardini, head chef at BiCE, shows us how to master potato pasta

Mix boiled potatoes (1kg) with flour (200g), salt, Parmesan cheese (200g) and an egg

Cut the rolled dough into small cylinders (2cm approx). Press down on each gnocchi with your thumb

Heat tomato sauce and add the boiled gnocchi to the pan

Dust the table with flour (100g) and roll out the dough into a snake shape

04.

Cook the gnocchi in salty, boiling water. Once they start to float, drain

06.

Arrange the gnocchi in a bowl, season to taste
