We incorporat­e the fun of karaoke into a serious night out drinking. We serve craft hops and creative cocktails.

We try and make our drinks simple and affordable, but with an emphasis on presentati­on. The vessels we use are fun. Take the Black Cherry, for example. It’s served in a classic Coca-Cola bottle. Or the Dirty Pop served in a popcorn bucket complete with popcorn.

Our presentati­on makes you think you are going to taste something completely different. The element of surprise on customers’ faces is great to witness.

I love the unpredicta­bility at Lucky Voice. You never know what you are going to see, especially at a Lucky Voice brunch.

Aside from Lucky Voice, I really like McGettigan’s. I’m crazy about sports and McGettigan’s has a relaxed vibe, which is completely different to the chaos at Lucky Voice – a welcome thing on my days off.

I was really surprised by Paris Hilton when I once served her. She was much nicer than I expected.

If I wasn’t a bartender I’d be a rugby coach for kids. I’ve played rugby since I was child, and I wish I had more time to play now. It’s my passion, after making drinks.
