WATERMELON AND CHILLI RELISH

Ingredient­s:

• 200 gm watermelon skin • 3 tbsp white vinegar • 5 tbsp sugar • 1 tsp chilli flakes • 2 tsp fennel seeds

Method

Cut watermelon skin into thin julienne.

Place the watermelon skin, vinegar and sugar together in a pan, and cook for 30 minutes on slow fire.

Add chilli flakes and fennel. Serve.
