Get ready to feast with these four quick and easy, mid-week meals from resident chef Kate Percy, that are all big on flavour but little on calories

Cramming your training into a busy working week can be tricky enough without the added stress of preparing a nutritious and balanced meal every night to help you refuel and recover effectivel­y from each session. But help is at hand, as I’ve designed the four recipes overleaf specifical­ly with speed in mind. First up is a dish I was lucky enough to come across on a visit to Venice – Venetian polenta with baby shrimps. A delicious dish of baby shrimps sautéed with garlic and rosemary and served with some soft polenta. Perfect to rustle up before or after training – corn

polenta takes literally one minute to cook – and packed with sustaining carbohydra­te to top up your muscle glycogen stores.

Moving on to Mexico, my family and I love to tuck into these tasty Fish tacos with spicy guacamole after an evening workout. Again, they take minutes to assemble and are packed with high quality protein to aid muscle recovery and healthy fats to boost immune health.

For the not so balmy summer evenings, this Black bean chilli will warm you up. Loaded with protein, complex low-GI carbohydra­te, B vitamins, fibre, iron and calcium, this nutritiona­l powerhouse will keep you in tip-top health. In fact, black beans contain 10 times more antioxidan­ts than oranges, according to recent studies.

And lastly we go oriental with this simple and incredibly tasty Thai prawn curry energy bowl. A ‘go to’ to spice up you week. A fragrant broth packed with juicy prawns, rice noodles and crunchy fresh vegetables, it’s well-balanced with carbohydra­te, protein and fat and has the added benefits of ginger, garlic and chillis – antiinflam­matory foods which can help towards muscle recovery.
