HALLOUMI
GOOD BBQ IT
Halloumi is a delicious, almost meat-like in texture, goat or sheep cheese that’s low in lactose (note: it is relatively high in saturated fat and salt, and avoid cow’s milk varieties). Just pop a few slices on a hot BBQ or griddle, grill for 2mins each side and eat immediately with sweet chilli sauce.
BETTER BOOST YOUR BURGER

BEST WRAP IT UP
Lay out a slice of prosciutto, place a slice of halloumi on top and then a piece of cooked red pepper (from a jar) and a large basil leaf. Add a few grinds of black pepper and fold up the sides of the prosciutto to make a parcel. Brush with olive oil and fry for a few mins on each side. Serve with salad and pesto sauce.
