TUNA & BEAN SALAD

INGREDIENT­S

• 3 tbsps extra virgin olive oil

• 2 x tuna steaks For the salad

• 2 x tins cannellini beans

• 2 x preserved lemons, thinly sliced

• Juice of 1 lemon

• 1 small red onion, sliced thinly

• 3 tbsps flat leaf parsley, coarsely chopped

• 1 tsp ground cumin

• 1 tsp capers, rinsed and drained

• 6- 8 semi-dried tomatoes

• 10 cherry tomatoes, halved

• Lime wedges to serve

METHOD

1 Toss all the salad ingredient­s in a bowl. Lightly brush the tuna with a little olive oil, season and grill on a hot BBQ. Cook the steaks for 2mins on each side. They should be pink inside and they will continue to cook slightly once removed from the pan. Serve with salad and lime.
