BBQ LAMB CHOPS ‘GREMOLATA’
Serves 4 GREMOLATA is a great Italian topping that brings any grilled meats to life with a zingy freshness. It’s the perfect accompaniment at a trendy barbecue. Ingredients: Lamb chops: 12 lamb chops 100ml olive oil 1 teaspoon cumin 2 cloves of garlic, chopped Gremolata: Zest of lemon 1 clove of garlic, chopped fine
4 tablespoons chopped parsley
1 tablespoon chopped chives
3 tablespoons olive oil To finish: Squeeze of fresh lemon Method:
1. Place chops in a bowl and add olive oil, cumin and garlic. Marinade for at least an hour.
2. Have the barbecue coals hot and seal the chops until golden.
3. In a small pan, add all the gremolata ingredients and warm through, adding a generous grind of salt and pepper.
4. Remove the chops from the grill, adding a generous spoon of gremolata to each one.
5. Squeeze over some fresh lemon just before serving.
