Healthier eating on Sharon’s menu

As part of her sterling efforts in helping the people of Airdrie get slim, weight loss consultant Sharon McGinness gives her members a series of recipes for tasty and, crucially, healthy meals.

Sharon, who runs several Slimming World classes in Airdrie, has shared one of her “favourite”recipes with Advertiser readers, adding:“Diet Cola chicken is one of Slimming World’s most popular and versatile dishes.

“It’s one of my favourite meals to cook; it’s quick and easy to make.”

Ingredient­s

Low-calorie cooking spray.

One onion, finely chopped.

One red pepper, one yellow and one green pepper, chopped into chunks.

Two garlic cloves, finely chopped.

Four skinless chicken breasts, cut into pieces.

Two tsp Worcesters­hire sauce.

Four tbsp tomato purée.

Eight tbsp passata with onions and garlic.

One tbsp dark soy sauce/tamari.

One tsp dried mixed herbs. 330ml can of Diet Cola. 200ml chicken stock. 200g sugar snap peas.

Method

Place a large pan sprayed with low-calorie cooking spray over a high heat.

Add the chicken, peppers and onion and stir-fry for four-to-five minutes, or until lightly browned.

Add the Diet Cola, stock, pasata, tomato purée, garlic, Worcesters­hire sauce, soy sauce and dried mixed herbs and stir well.

Bring to the boil, cover, reduce the heat to medium low and simmer for 12-15 minutes.

Add the sugar snap peas, stir and increase the heat to medium-high.

Cook for another 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.

Tip –

Try swapping Diet Cola for diet orange for a tasty change.
