Enjoy a love cake recipe

Chip shop Craft and Harbour in Ayr have created a special Valentine’s sweetheart tablet cheesecake.

Owner Ann James was inspired by her husband and sweetheart Tony James to create the romantic treat.

And here she shares it with our Life readers.

Sweetheart tablet cheesecake

Serves 8- 10 people Ingredient­s

For the base: 150 grams butter ( melted); one large packet of digestive biscuits; one x 26cm adaptable spring cake tin.

For the cake: 800ml double cream; 400 grams full fat cream cheese; 400 grams Scottish tablet ( chopped); one tsp vanilla essence; strawberri­es for decoration. Method

Place the biscuits into a food processor bowl and mix into a rough breadcrumb mixture.

Add the melted butter and mix together.

Place the biscuits base mixture into the bottom of the cake tin and press down evenly.

Put into a large mixing bowl the cream cheese, vanilla essence and cream and mix until it has a thick consistenc­y.

Do not over- mix or it will be too thick.

Gently blend in half of the chopped tablet.

Place the cake mixture on top of the biscuit base.

Use the remainder of the tablet to decorate the top of the cake.

Slice the strawberry into segments and pop on to the centre of the cake.

Place into a fridge for at least three hours to set then serve.
