Hygiene team see red at Chinese Ruby

Dirt in the kitchen

- Michael Reynolds

A popular Chinese restaurant has been ordered to up its game by food safety inspectors.

Ruby 7 Days on Ayr’s New Bridge Street was visited by council officers on August 7 and handed an ‘ improvement required’ rating.

They found a large, uncovered container of rice sitting in a temperature of 18 degrees - which they say was not a hygenic condition.

Various cloths lying around the kitchen were in a dirty condition, with no indication of a system for separating wiping cloths for raw and ready- to- eat areas.

And water circulating the wok cooking range was full of food debris at the time inspectors visited.

Inspectors also found fault with the standard of cleanliness on floors, walls, behind fridges, tables, shelves and a cooker, and the blade of a tin opener.

Making recommendations, an environmental health officer said: “I recommend the premises be deep cleaned at a frequency that does not allow the build- up of dirt and debris observed at the time of inspection.

“As discussed, the kitchen could do with a re- fresh and appropriate areas re- painted with an impervious paint.”

Metal chains acting as an insect screen were also criticised as not being up to scratch by inspectors.

The report said: “The insect screen must be suitably repaired or replaced to prevent ingress of pests.”

Other issues included salad used for garnish not being prepared in the designated area and monitoring records were not available for inspection.

Inspectors didn’t find any food standards issues during their visit to the town centre restaurant.

Owners have been given three months to solve the issues that were found in the inspection earlier this month.
