the Coylton gal dropped out of st andrew’s University after three years of higher education and enrolled on the get Into Hospitality programme, which provides free training for unemployed young people with an interest in working in the industry.

the five- week training course gives those aged 16- 25 the opportunity to learn a variety of skills needed to work in the industry, undertake a work experience placement, and obtain a variety of relevant qualifications including certificates in food hygiene and health and safety.

the former pupil of Wellington school, completed the course and was then offered a job helping to run the luxury Carrick resort’s fine- dining restaurant 1906.

Rachel said: “I liked the idea of working with people and being hands- on.”

“an old family friend told me about a prince’s trust course they’d done and I found the get Into Hospitality course online.

“I expected to learn the basics about setting tables, but my expectations were exceeded.

“I never imagined I would get to work somewhere like turnberry or that, if I did, I would get there so quickly.

“the people running the course put a lot of work into people like me, and I definitely don’t regret leaving university.”
