ANGLESEY chef Ellis Barrie wowed judges on The Great British Menu last week as he cooked a “perfect” dish.
Ellis, from the Marram Grass restaurant, near Newborough, scored 10 out of 10 with his fish course on the BBC2 show and made it through to the final of the competition.
His “You cannot be sea-rious” dish featured seabass confit in pork fat with barbecue cauliflower puree and Menai mussels.
Judge Daniel Clifford, who has two Michelin stars, said the selftaught chef has “real talent” and that he’d never tasted a dish like it.
Ellis, 27, said his inspiration for the meal was “celebrating family holidays”, with memories of going fishing with his father and having barbecues on the beaches of Anglesey.
Tasting the dish, Clifford said he was “really confused” but, when reading out the scores, he said: “You should be very proud.”
Dad-to-be Ellis, who runs the restaurant with brother Liam, was competing against two other chefs from the North-west of England for the chance to go up against cooks from across the UK.
He won Friday’s make-or-break episode of the popular series against his friend Paul Askew to represent the North-West in this year’s final.
