Chef showcasing best of Irish produce for guests

GUESTS at the lavish wedding of Rory McIlroy and Erica Stoll will savour a gourmet ‘flavour of Ireland’.

Ashford Castle’s award-winning executive chef, Philippe Farineau,

(right) has created a menu to showcase the very best of Irish organic food and culinary skills.

Guests will today enjoy a wedding menu specially designed to reflect the best of Mayo and Irish produce ranging from Atlantic wild salmon, venison, beef, seafood and lamb.

However, even vegetarian­s and vegans will be catered for, such is the attention to detail.

The menu will also feature produce sourced from around Ashford’s own estate and local villages.

Ashford’s famous wine cellar will offer a selection of the finest vintages and champagnes for guests to toast the happy couple.

In honour of the fact the bride is American — she was born in New York before settling in Florida — a selection of fine US wines will also be available.

Mr Farineau will oversee a catering team drawn from all over Mayo and Galway to handle the wedding.
