Shrimp tacos with butter, garlic and paprika
Try this tasty alternative to classic fajitas.
SERVES 2
15g butter 2 garlic cloves, chopped 200g shelled raw or cooked prawns A pinch of paprika 4 tortillas Lettuce, shredded Chipotle garlic mayonnaise (see recipe below)
CHIPOTLE GARLIC MAYONNAISE
2 garlic cloves, peeled 250ml mayonnaise 3-6tbsp chilli paste Put all the ingredients in a food processor and whizz for 3 mins. Set aside.
TACOS
Melt the butter in a frying pan over low heat and fry the garlic, prawns and paprika for 2-4 mins, stirring occasionally, until the prawns are cooked through.
Place a dry frying pan over high heat. Warm each tortilla for about 20-30 secs on each side.
Layer up the lettuce on the warmed tortillas, then the pico de gallo (see recipe above), cooked prawns and chipotle garlic mayonnaise. Serve straight away, with lemon wedges to squeeze over.
