Prawn bruschetta

Ingredient­s

200g raw prawns 160g cherry tomatoes cut into quarters 100g rocket leaves 1 clove garlic crushed Pinch of chilli flakes (optional) 1tbsp olive oil 80g white French stick cut into four slices Bunch fresh coriander chopped (optional) 1 lemon cut into wedges

Directions

1 Mix together the tomatoes, rocket and coriander in a small bowl. Dress with a squeeze of lemon juice.

2 Heat the olive oil in a pan and add the garlic and the chilli. Cook for 1-2 mins and then add the prawns. Cook until pink.

3 Put the bread in the toaster. When toasted serve with some of the salad and the prawns on top. Be sure to pour over any juices left in the pan. Additional informatio­n: The recipe contains gluten. Prawns are a good source of protein and are low in fat.
